Ingredients

• White rum, the competition version uses Bacardi Superior30 ml
• Aged rum, the competition version uses Bacardi Solera30 ml
• Pedro Ximénez sherry, sweet PX sherry, not cherry liqueur15 ml
• Matcha, powder measured by volume: one 5 ml teaspoon, not brewed tea or a conversion to grams5 ml
• Yuzu peel, express the oils over the drink, then discard1 pc
• Ice
• Large ice cube

Method

1. Sift one teaspoon of matcha into a bowl or glass and add the white rum. Whisk with a chasen tea whisk until the powder is dispersed and the lumps are gone.
2. Strain into a shaker and add the aged rum and Pedro Ximénez sherry.
3. Add ice and shake vigorously until chilled.
4. Double-strain into a rocks glass over one large ice cube.
5. Express the yuzu peel over the drink to release its oils, then discard the peel.
