Method
- Fill the glass with ice.
- Add the cold Campari.
- Top with club soda, without stirring much so it keeps its fizz.
About
The simplest aperitivo there is: just Campari and soda water, both cold, nothing else in the way. It was born ready for the bottle, so it's the same drink it's always been. Soda water lengthens Campari without adding sugar. Tonic creates a different balance, adding sweetness as well as bitterness.
